Preheat the oven to 375°F (190°C). Grease a 9-inch cast iron skillet or 9-inch square baking pan.
In a large mixing bowl, whisk together:
1 cup masa harina
1 cup all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
In a separate bowl, combine:
1/4 cup honey
1 cup milk
2 large eggs
1/2 cup unsalted butter, melted
1/4 cup vegetable oil
1/4 cup sour cream
Fold in 1/2 cup of shredded Longhorn or Colby cheese into the dry ingredients. Pour the wet ingredients into the dry ingredients. Stir until just combined. Be careful not to over-mix. Sprinkle remaining 1/4 cup of cheese on top of the batter. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
Optional: Brush the top with additional honey while still warm.
Let cool in the pan for 10 minutes before slicing.
