3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/3 cup vegetable oil
1 cup warm water
Mix the dry ingredients (flour, salt, and baking powder) in a large bowl.
Add the vegetable oil and mix with your fingers until the mixture resembles coarse crumbs.
Gradually add the warm water while mixing with your hand until a dough forms. The dough should be smooth and not sticky - you might not need all the water.
Knead the dough for 2-3 minutes until smooth and elastic.
Cover and let rest for 30 minutes at room temperature.
Divide the dough into 12 equal portions and roll into balls.
On a lightly floured surface, roll each ball into a thin circle (about 1/8 inch thick).
Heat a large skillet or griddle over medium-high heat. Cook each tortilla for about 30-45 seconds per side, or until light brown spots appear.
Keep the cooked tortillas warm by wrapping them in a clean kitchen towel. Don't stack the uncooked tortillas as they'll stick together. Make sure your skillet is hot enough. You should see bubbles forming when you place the tortilla on it.
