Ingredients:
1 cup (93g) Masa Harina
3 tablespoons (37g) granulated sugar
1 tablespoon baking powder
1/2 teaspoon table salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
2 large eggs
1 1/2 cups (341g) milk
2 tablespoons (25g) vegetable oil
2 tablespoons (28g) butter, melted
Instructions:
In a large bowl, whisk together the dry ingredients: 1 cup masa harina, sugar, baking powder, salt, garlic powder, onion powder, and chili powder.
In a separate bowl, beat the eggs lightly, then add the milk, vegetable oil, and melted butter. Mix well.
Pour the wet ingredients into the dry ingredients and stir just until combined. A few small lumps are fine to avoid overmixing.
Let the batter rest for 5-10 minutes to allow the masa harina to fully hydrate.
Preheat your waffle iron according to manufacturer's instructions.
Lightly grease the waffle iron with cooking spray or brush with oil.
Pour the appropriate amount of batter onto the preheated waffle iron (usually about 1/2 to 3/4 cup depending on your waffle iron size). I use a large cookie scoop in each of the four quadrants. This creates separate smaller units.
Cook until the steam stops and waffles are golden brown, approximately 3-5 minutes.
Remove carefully with a fork or tongs to avoid scratching your waffle iron.
Serve immediately for best texture and flavor.
These waffles can be served with both sweet toppings (maple syrup, honey) or savory accompaniments (sour cream, salsa, avocado) depending on your preference. They make a great bed for molcajete or other spicy dishes.
