Ingredients are added in three distinct phases:
Step 1
4 ½ cups sugar
3 cups water
3 cups Karo syrup
Step 2
9 Tablespoons butter
3 pounds peanuts (warmed)
Step 3
4 ½ teaspoons baking soda
1 Tablespoon water
1 Tablespoon vanilla
Spray 4 quart kettle, spoons, and cookie sheets lightly with PAM
Combine Step 1 ingredients in kettle. Cook over medium heat, stirring occasionally until the liquid reaches 240°
Add Step 2 ingredients and stir constantly until temperature reaches 300°.
(Be careful not to burn the mixture)
Mix baking soda, into water, and vanilla then add this step 3 mixture. Stir fast and thoroughly. Immediately remove the kettle from heat and carefully pour onto about 5 cookie sheets and spread as thin as possible (one nut thick), cool, break into pieces and bag as desired.
