Sauce
1 cup sugar
2 Tbsp flour
2 tsp salt
1 ¾ cups unsweetened pineapple juice
2 eggs beaten
1 Tbsp. lemon juice
Acini de Pepe
In large pot whisk together sugar, flour, salt, pineapple juice and eggs. Cook over medium heat until thickened, the turn off heat and whisk in lemon juice.
Cook Acini Di Pepe one-minute shy of the directions then drain and rinse well before adding to pineapple egg mixture. Mix. Refrigerate the pasta mixture overnight.
Fruits
2 cups mandarin oranges, drained
20 oz crushed pineapple, drained
8 oz cool whip
1 cup mini marshmallows
Before serving mix the oranges, pineapple, cool whip, and marshmallows.
