2 cups of spelt flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 tsp salt
1 1/2 cups of milk
1/4 cup of honey
2 eggs, separated
1 tablespoon vanilla extract
4 tablespoons of butter
4 tablespoons of unrefined coconut oil
Directions:
Mix flour, baking powder, baking soda and salt in a mixing bowl. Stir to combine. In a another mixing bowl, mix together the milk, honey, vanilla and 2 egg yolks. Add the dry ingredients and stir gently until mostly combined. Add the melted butter and coconut oil. I like to use a hand beater to get a nice texture. Scrape the bowl to make sure all the dry ingredients are mixed and beat until smooth.
Whisk eggs whites until stiff and then fold into the batter until they are lightly incorporated.
Pour or scoop the batter onto the waffle iron, using approximately 1/2 to 3/4 cup for each waffle.
